Flavour notes:

Heinde en Verre dark chocolate Venezuela, the makers themselves say the following about the Zesty Venezuela 71%. 'A lively rich palette of: coffee, citrus, mandarin, orange, green spices, bay leaf and liquorice.'

Background information:

The cocoa for this dark chocolate comes from the Los Laureles estate in the Serrania Perijá valley, near the Colombian border in the rugged mountains of Venezuela. Here, the Marquez family manages the estate and promotes the cultivation of various crops such as cocoa, coffee, beans and plantain. This area contains some of the oldest cocoa trees in Venezuela. Together with the University of Paris, the Marquez family is researching the DNA of several Guasare cocoa varieties grown on different plantations in the region. Some plantations show Criollo DNA, while Los Laureles appears to be an example of classic Guasare DNA. To preserve this unique cocoa variety, the family has set up a nursery where pure genotypes are selected and seedlings are grafted for replanting.

In recent decades, the region has been struggling with deforestation due to human activities. The Marquez family therefore started an initiative to preserve native cacao species and agroforestry systems. This programme encourages farmers to plant cedar trees for shade and to grow cocoa without causing deforestation.
