Definite Chocolate is a mirco batch bean-to-bar craft chocolate maker from the Dominican Republic. They buy all their organic cocoa directly from local producers. This ensures that they work with only the highest quality cocoa beans and also have and maintain direct contact with the cocoa farmers.

The cocoa used for this bar of dark chocolate comes from Öko-Caribe. They are based in Pimentel in Duarte province, the largest cocoa growing region in the Dominican Republic. This award-winning cocoa is known for its consistent, superior quality in their annual production of more than 500 tonnes.
Öko-Caribe maintains close relationships with its 165 farmers through technical training in agronomic practices and organic certification.
Farmers harvest the ripe cocoa fruit, open it and then extract the pulp and cocoa beans. The beans are taken to Öko-Caribe, where they are then, fermented in wooden boxes for six days. They are then dried for seven to 10 days, with the help of the sun.
